    The COVID pandemic has had a devastating effect on brick-and-mortar retail, with bars and restaurants being among the hardest hit.  In Seattle alone, more than 600 restaurants -- from upstarts to beloved institutions – have permanently shut their doors.  Yet amidst the devastation, many businesses have shown resilience, and are coming out of the pandemic with better strategies for risk mitigation in what has been a historically risky industry.  This event will focus on one of the city’s biggest success stories: Ethan Stowell Restaurant Group, which clawed its way back to full re-opening and completed new projects that others likely would have abandoned.  Join the Group’s namesake, Ethan Stowell, for a cooking demonstration at his newest establishment, the Victor Tavern, a buffet dinner, and a fireside chat moderated by UW professor Tracey Seslen about challenges overcome, lessons learned, and his outlook on the restaurant industry going forward.
